Description

Celebratory, versatile and timeless; a stunning golden colour that delivers bright, enticing notes of lemon, honeydew, quince and white flowers. Complexity is enhanced by notes of baking croissant that follow due to the 6 years of lees ageing. Luxurious, moreish and approachable with a seamless balance, fine mousse, precise acidity and that All Angels intensity gliding stylishly into a soft, lingering finish.

Exquisite as an aperitif, and alongside pairings such as oysters, white truffle or chocolate. This heavenly Cuvée is one for every customer.

Vineyard

South facing, English climate. Total size 6 ha. Prevailing SW winds. Free draining soil with a good deposit of flint - soil warms quickly.

Uniquely historic site of the Roundhead encampment before the first Battle of Newbury, views of iron age forts, Highclere Castle, Newbury racecourse and Coombe Gibbet.

Viticulture

Emphasis on sustainability with as little chemical intervention as possible. Most weeding done mechanically or by hand; weather stations designed to warn on disease risk to minimise unnecessary intervention. No burning of pruning but mulched instead. Mechanical canopy management but hand leaf stripping as well as hand pruning and harvesting. Frost management comprises bougies, frostguards and frost fans. Vineyard mowing minimised to reduced soil compaction and flail mower used only to mulch prunings.

Vinification

Each of our All Angels Sparkling Wines is hand crafted using the “Traditional Method” for fine Sparkling Wine and Champagne, including secondary fermentation of the wine in bottle.

100% of the wine went through Malolactic Conversion. The wine spent a minimum 6 years ageing on the lees and has been on cork for a minimum 9 months.
